Salsa Verde Chicken Bake - Creamy, Comforting Weeknight Winner Dinner

When its mid week and you are craving a hearty, easy and quick comforting dinner recipe such as this - Taco Stuffed Pepper Casserole

- very few recipes can beat a comforting casserole recipe for dinner. Its easy, its wholesome and the best part - a perfect one pot meal for the family.

What I really love about this Salsa Verde Chicken Casserole is that how quickly it comes together and the flavors. Its just so mild, creamy, bursting with Tex Mex flavors.

What is Salsa Verde Chicken Casserole?

Salsa verde chicken casserole is a baked cream cheese chicken casserole dish that combines cooked chicken with green salsa (salsa verde), cream cheese, and shredded mozzarella, often layered or mixed with corn tortillas leftover cooked rice.

I use my homemade salsa verde, made from tomatillos and green chiles, which adds a zesty tang that cuts through the richness of the cream cheese, while mozzarella adds that gooey, cheesy pull everyone loves.

This one pan chicken casserole is typically assembled in a baking dish, topped with cheese, and baked until bubbly and golden.

The result is a creamy, spicy, and deeply comforting dish that’s easy to customize and even easier to devour.

How to Make Salsa Verde Chicken Casserole with Cream Cheese and Mozzarella

Ingredients:

  • 3 cups shredded cooked chicken
  • 1 (16 oz) jar salsa verde
  • 8 oz cream cheese, softened
  • 1/4 cup Sour Cream
  • 2 cups shredded mozzarella cheese, divided
  • 1 cup Mexican Cheese blend
  • 1 teaspoon Chili Powder
  • 1/2 teaspoon Smoked Paprika
  • 1 teaspoon Ground Cumin
  • Salt and black pepper to taste
  • 8 small corn tortillas or 2 cups cooked rice (optional)
  • Chopped cilantro , Avocado Slices, Pico De Gallo, and sour cream, for garnish

Instructions:

  1. Preheat oven to 350°F (180°C).
  2. Stir in the shredded chicken, with ground cumin, smoked paprika, chili powder, salt and pepper, and also cubed cream cheese (softened to room temp.)
  3. Grease a casserole baking dish (9x11") and pour in some Salsa Verde in it.
  4. If using tortillas, cut them up into four equal halves, layer half in a greased baking dish. Add the chicken mixture and pour in the salsa verde over it.
    • If using rice, mix it directly into the chicken and salsa verde mixture and spread evenly in the dish.
  1. Top with the Mexican cheese blend. Repeat another layer and top with the remaining 1 cup of mozzarella.
  2. Bake uncovered for 20–25 minutes or until bubbly and golden on top.
  3. Garnish with chopped cilantro, sliced avocado, some freshly made Pico de gallo, chopped Jalapenos and serve aside of some creamy sour cream.

What to Serve with Salsa Verde Chicken Casserole

While this easy Salsa Verde Chicken Casserole makes for a wholesome dinner in itself, here are some delicious sides which i love to serve this with.

I typically serve this aside of a fresh dollop of creamy sour cream.

Also you can simply whip some sour cream with some lime juice, a pinch of salt and some lime zest.

It adds a nice zing to this dish. Besides that, here are some of my absolute favorite side dishes - I love to serve with this easy Mexican Chicken bake, especially for dinner parties.

  • Mexican street corn (elote)
  • Cilantro lime rice
  • Guacamole and chips
  • Mexican coleslaw
  • Refried beans or pinto beans

Storage and Meal Prep Tips

  • You can easily store the leftovers in an airtight container in the refirgerator for upto 4-5 days.
  • Freeze: To meal prep Salsa Verde Chicken Casserole, simply assemble the unbaked casserole in a freezer friendly container. You can freeze this for upto 3 months.
  • Thaw overnight in the refrigerator and add the cheese right before you bake.

Make-ahead: Prepare the entire dish and refrigerate for up to 24 hours before baking.

Can I use Greek yogurt instead of cream cheese?

Yes you can, however, if you use greek yogurt, the texture of the sauce will be very thin and it will be very watery. So its best to use good quality Sour Cream.

Can I use frozen chicken?

Yes ofcourse you can.

However you will need to pre cook the chicken before adding it to the casserole dish.

You can use an instant pot to cook the chicken really quickly or simply place it in a bowl with water and microwave on high for 10 min.

And once its done, drain the water and shred the chicken using two forks and its done.

How do I make it gluten-free?

You can use gluten free tortillas to easily make this gluten free Chicken Casserole recipe.

How do I make Keto or Low Carb Salsa Verde Casserole?

To make this even low carb and healthy, you can simply replace Corn Tortillas with Cauliflower rice or cooked Quinoa to make this even healthy.

INSTRUCTIONS

  • Preheat oven to 350°F (180°C).
  • In a bowl stir in the shredded chicken with spices - ground cumin, chili powder, smoked paprika, salt and pepper, and softened cream cheese
  • Cut the Tortillas in halves or you can cut them into four halves.
  • Grease a casserole baking dish with oil or cooking spray and pour in about 1/4 cup of the salsa verde.
  • Add the Corn tortillas in a single layer over it. Top with the shredded chicken mixture, mozzarella cheese and pour in the rest of the salsa verde. Repeat until you reach the top of the baking dish. Top with mexican cheese blend and mozzarella cheese on top.
  • Bake @350F or 180C for 20-25 min or until the cheese gets golden brown and bubbly on top.
  • Garnish with freshly sliced Avocados, Pico de Gallo (or some chopped red onions), Jalapeno slices and some freshly chopped cilantro. Serve.
